Mr. Myers is collecting your favorite camp recipes for posting on this webpage.  Please send him your best, including your recollection of when was the first time you served it, and which Patrol prepared the meal.

 

Recipe for Scoutmaster's Hawaiian Chicken

Ingredients:
4 chicken breasts
1 small onion
2 Tablespoons cooking oil
3 Tablespoons butter
1 red bell pepper
1/2 granny smith apple
1- 8oz can of crushed pineapple, drained (save juice)
1/4 cup liquid, use as much of the pineapple juice as you have and add water
to make 1/4 cup
1/8 cup of compacted brown sugar
 

Dice the apple, and pepper into small pieces.

Cube chicken breasts and brown with onions in oil and butter.
Pour off juice from chicken.
Start rice now.
Add brown sugar to water and pineapple juice mixture.
Add apple, pepper, pineapple and water/juice/sugar mixture
Simmer, stir frequently to avoid scorching.
Serve over white rice.
